Butternut Squash Soup



This is my 3 step recipe for butternut squash soup, it's easy, fast to make and super tasty. The ingredients you'll need are:
1 Bag of frozen butternut squash ( I use the frozen bags as it saves time)
2 Chopped Carrots
1 Chopped Onion
2 Litres of vegetable stock

Step 1 - So the first thing you are going to want to do is roast all your vegetables, for about 30 mins. I feel like when you roast them it brings out the flavours more, but you could just boil them straight away if you wanted.

Step 2 - After the vegetables have roasted nicely and have softened, you want to put them into a big pan and add 2 litres of vegetable stock. Let this simmer for about 20 - 30 mins until the vegetables have turn mushy.

Step 3 - Now that your vegetables are mushy, you want to take a blender and blend it all up until smooth. At this point I would recommend adding more stock or water to get the right thickness of soup you like. Add salt and pepper to taste.

And that's it, this makes enough soup for about 4 people but you can always double up on all the ingredients to make more.
